Fix Docker Build

* Replace docker file with template from https://github.com/vercel/next.js/blob/canary/examples/with-docker/Dockerfile
* Uses node 18 instead of Node 10 which is no longer compatible
* Add the option via ENV to build to config standalone and use this for the docker image
