After a few iterations I figured out a way to fix the new gz packages conflicting with the old ignition packages: Add Breaks / Replaces rules with the previous package, up to the revision number:

Breaks: libignition-gui7 (<< 6.999.999+nightly+git20220629+1r05f4beca490533c24c57890d625a2d878c0fba09-1)
Replaces: libignition-gui7 (<< 6.999.999+nightly+git20220629+1r05f4beca490533c24c57890d625a2d878c0fba09-1)
