With the latest changes to Kuadrant policies I adjusted the overrides testing with following changes:
testsuite/tests/singlecluster/overrides/test_route_override.pyas overrides are now applicable to HTTPRoutes, making it out of dateis_affected_byfunction to consider more than one policy being applied to a Gateway/HTTPRoute
