Added -DefaultSensitivityLabelForLibrary to Set-PnPList which allows setting the default sensitivity label for a library. pnp/powershell#2825
In my project we are working with pnp Framework 1.11 and it don't seems to be possible to do the same. Do I miss something is this feature is too new be available ?

Small question, we have, with pnp powershell 2.1 ( https://github.com/pnp/powershell/releases/tag/v2.1.0 ), the capacity to set the list Sensitivity Label for Library.
Added -DefaultSensitivityLabelForLibrary to Set-PnPList which allows setting the default sensitivity label for a library. pnp/powershell#2825
