Universal Kernel Image is UEFI binary consisting of kernel, initrd, cpu microcode, etc. All required parts to boot a system.

Iguana is build as separate initrd which shouldn't be update too often and also usually tied to single kernel. Building iguana as UKI together with all required parts will require signing only one UKI file and could be booted directly from UEFI firmware.
