[BUG] MLCubes are always the same version

Describe the bug

The MLCubes getting generated (model or metrics) are always the same version, as evidenced by the following files (just search for the string 0.0.1):

• https://github.com/mlcommons/GaNDLF/blob/master/mlcube/metrics_mlcube/mlcube_medperf.yaml

• https://github.com/mlcommons/GaNDLF/blob/master/mlcube/model_mlcube/mlcube_medperf.yaml

For consistency, the version of the mlcube should follow the version set by the version.py file.
