Clean up everest test-data

Inside the Everest tests folder (tests/everest/test-data) there are a lot of files checked in, we should review what is actually being used, and delete what is no longer relevant. In general we should try to avoid checking in text files.

If this issue becomes to large, feel free to convert it into a tracking issue for each sub-task.

Note that in the issues below it might be possible that there is nothing to clean up. If that is the case just close the issue with a comment
