possibility to setup more worker pools with different configs?

i'm looking for a way to deploy more worker pools
one a linux worker pool and the other a windows worker pool

i use gke to deploy the concourse chart
see https://github.com/cloudfoundry/bosh-community-stemcell-ci-infra/tree/main/build/concourse

but unless im looking at the docs/files wrong
i don't see an option where we can deploy multiple worker pools with different tags/os from the same deployment manifest

any suggestions or advice?
